The Knighton Hotel is an independently owned and run business situated in the centre of the ancient market town of Knighton, nestling in the hills of the Welsh Marches, close to Offa's Dyke.
Historically, the hotel would have been a handy resting place for travellers on the turnpike roads of yesteryear before they journeyed into the wilder and more rugged country to the South and West. The building was also the hub of the business and farming communities of Mid Wales, especially on Market Days when the bars would be crowded with farmers and rogues from the surrounding countryside and many deals would be struck over a “pint or two” in the Hotel's Bar. From seasonal waiting staff and kitchen assistants to the Operations Managers dedicated to food, beverage and accommodation, the team have been hand picked because of their enthusiasm, genuine helpfulness, friendliness and their commitment to our family business which is at the heart of the service industry.
The Knighton Hotel after its complete refurbishment in 2011 was run under tenancy until February 2014 when the tenancy came to an end and the business was placed back in the safe hands of Rowena & Paul who now look forward to establishing the hotel as one of the leading hotels in Rural Mid Wales.
Rowena performs the role of Group Area Manager overseeing the running of The Knighton Hotel as well as a number of other family run hotels, whereas Paul looks after the general day to day maintenance and ongoing refurbishment of the Hotel Group. Paul's background in building surveying, project and facilities management teamed up with the financial and operational management experience of Rowena has proven to be a successful combination. Our award winning Chef Paul Webber, who boasts a Rosette and was Winner of Taste of the West Chef along with many other accolades leads and inspires both the kitchen and restaurant teams. He has managed kitchens in a number of large corporate and family owned businesses and he knows how to deliver the ultimate dining experience which is neither pretentious nor fussy. He allows classic favourites to compliment his innovative menu, delivering flavour, presentation and above all ….value for money. His passion and enthusiasm for food, is an inspiration and education to the restaurant team and has been well received by our guests..
Paul & Rowena’s first Hotel project began in the late 1990s when they refurbished, renovated and extended Mortimers Cross Inn, Herefordshire which became a thriving Hotel offering luxury accommodation to corporate guests and holiday makers, as well as offering facilities for weddings and other large events. The business was sold in 2004 which facilitated the purchase of the Castle Inn and Caravan Park (Wigmore, Herefordshire) and also the infamous Radnorshire Arms Hotel (Presteigne, Powys), both of which are now run under tenancy by like minded business partners.
The family have loved the Welsh/Herefordshire/Shropshire countryside for some time and are delighted that they can live and work in such picturesque surroundings. The Knighton Hotel has been a huge investment for the family. Paul and Rowena recognised the potential and opportunities in the area and when the opportunity to purchase the Knighton Hotel presented itself in 2009 (in its then derelict state), they could not believe the opportunity and challenges that faced them. They strived to restore this magnificent listed building to its original magnificence but with a modern and contemporary twist. They worked for 2 years in preparing and delivering the restoration program and opened for business in 2010 winning the Powys Business Awards in 2011, reflecting their determination and the quality of restoration of this local historic land mark building.
The challenge that faced them in 2009 was met full on and they have delivered an outstanding performance.
